Snack and Beverage Recipes

SMOOTHIE From the kitchen of Char, MS A smoothie consists of several parts. Usually a milk or juice base with added protein and fruit. What I do: I use either milk, soy milk, rice milk (protein is in these) or apple juice as a base for a smoothie. I add a few ice cubes if the fruit I use is fresh instead of frozen. I add a mixture of fruit. Bananas, apples, oranges, berries of all types, peaches, plums, nectarines, mango,.... whatever you like. A beginner smoothie would be orange and banana or apple and peach. This gives you an idea. You can mix more than 2 fruits but for a child I would start with 2 of their favorites. For extra protein punch I always use *TOFU*. It does not have a flavor on it's own but instead it takes on the flavors of the other things added in the drink. The best type of tofu for a smoothie is *silken*, however a *soft* tofu works almost nearly as well. For a full blender of fruit and base, I would add a 1/2 block of tofu. You can add brewers yeast and/or wheat germ. The wheat germ will add a nutty flavor. Both these are excellent additions that provide nutritional punches. A little goes a long way...so about 1-2 tsp added would be beneficial. If you use too much the kids may not like it as much. Blend well. Serve cold and fresh. Voila!
