Fried Rice From the Kitchen of Char, MS Ok, I don't have specific amounts as I do not use a recipe, but I will try and be as accurate as possible. 4 cups leftover white rice 1/8 cup scallions or chives 1/8 cup julienned carrots 1/8 cup julienned water chestnuts 1/8 cup frozen peas 1/8 cup broccoli, cut into very small pieces 1/2 cup diced pork, chicken, or shrimp 1/4 cup chicken broth Soy sauce Peanut oil (I use olive oil) Saute' white rice, scallions, carrots, chestnuts, broccoli, pork/chicken/shrimp in oil for a few minutes until thoroughly warmed through and begin to "toast" ever so slightly. Add chicken broth and about 2 Tbs. soy sauce. Continue for another minute. Add frozen peas and cook another 2-3 minutes. Transfer to serving bowl. Use soy sauce as a condiment to you liking.
